Sweet Peppers & Pepperoni Pizza

Ooo, la la.....what a terrific pizza!



I know I will be making this on repeat for years to come.


This pizza has it all-----sweetness from the mini sweet peppers, savory from the loads of pepperoni and underneath it all is a perfect blend of garlic oil and a generous amount of nutty, shredded Asiago cheese.



Asiago is the cheese to go with because it's inherent nuttiness is really magnificent with the other components.



You could find yourself quite happy with a big slice of this pizza in one hand and an ice cold beer in the other!



Mmmmm. So good!




  • 1 store bought pizza dough, thaw if frozen and bring to room temp

  • 1 8oz package of sliced pepperoni

  • 1 16oz bag of mini sweet peppers ( such as Sunset One brand)

  • 1 1/2 cups of shredded Asiago cheese ( grate fresh! I use Bel Gioioso aged asiago)

  • 1/2 cup of extra virgin olive oil

  • 1 tsp. red pepper flakes

  • pinch of sea salt

  • fresh cracked black pepper

  • 1 tbsp of chopped red onion

  • 1 tbsp of grated Parmesan cheese

  • 1 tbsp of julienned fresh basil


Preheat oven at 375 degrees


lightly flour the area in which you are rolling out your pizza dough. Once your pizza dough is the size you want it to be, place it on a lightly greased cookie sheet, or pizza stone and set it aside.


In a bowl, whisk together the olive oil, salt, pepper, red pepper flakes, grated Parmesan and fresh basil, set aside.


Wash the sweet peppers and cut or tear them into medium pieces. ( I tore mine) --discarding the seeds.


Slather the olive oil and spice mix evenly on the pizza dough, add the Asiago cheese then the sweet peppers. Top with pepperoni , I used about 30 slices but it really is up to you.


Bake until golden brown and bubbly.


Garnish with lots of fresh basil and enjoy!
