This is a wonderful, fulsome pesto with origins in Sicily. It's meant to be served chilled with busiate. a type of corkscrew pasta but any pasta you prefer will do.
Here is the recipe---
8 oz of cherry or grape tomatoes
2 cloves of garlic, peeled
2 tbsp. of golden raisins
1/3 cup of slivered almonds
2 tbsp. of capers
2 tbsp. Kalamata olives
1 tbsp. tomato paste
1 cup of fresh basil
1/4 cup of olive oil
1 tbsp. of extra virgin olive oil
juice of half a lemon
fresh crack pepper and salt to taste
Mix everything in a food processor, pulsing gently, until all ingredients are combined.
***To allow this to chill for a few hours or up to overnight will yield the very best results.
