Ginger Carrot & Cabbage Fritters

So delightful and easy to make!

These humble ingredients get a chance to shine in these crunchy, delicious fritters!


Making fritters out of veggies that might otherwise go sad and wilted in your crisper drawer is a brilliant way to offer them exultation.


For me, this time around, it was a few carrots and small bit of cabbage. They work so well together!



Here is what you'll need--


3 medium carrots, shredded

1 cup of cabbage, shredded or sliced thin

1/2 a cup of chopped Cilantro ( fresh basil will do too)

1 garlic clove, minced

1 tbsp. of fresh grated ginger OR ginger powder

3 tbsp. of all purpose flour

2 eggs

salt & pepper


Large skillet or fry pan.


Light oil like avocado oil to fry them in.



Mix all the ingredients in a bowl. I use my clean hands to incorporate everything, it's just easier but feel free to use a fork or wooden spoon.


Meanwhile, heat just enough oil to cover the bottom of the pan. We don't want to submerge the fritters--just enough oil to flip them and cook each side until golden.


Using a tablespoon, scoop out the mixture and place in the fry pan. Flatten with the back of the spoon or a spatula to create a disc/fritter.


Let them fry until golden and place on a plate with a paper towel to absorb the oil.


This recipe should yield about 8-10 fritters.


Dipping sauce suggestion


Thai Peanut sauce or drizzle with Hot honey
